Cynara cardunculus, commonly named cardoon, is a perennial with large prickly, jagged silver-gray leaves and thistle-like blue-violet flowers. It typically grows in clumps to 3′ tall with flower stalks rising to 6′. The celery-like stalk and unopened flower heads are edible, but are a poor substitute for the more popular globe artichoke, and are grown mainly for ornamental purposes.
